This study aimed to design, fabricate, and evaluate a coffee roasting machine with high efficiency and market-acceptable roasting quality. The machine, measuring 11m x 11m x 13m, was tested for its roasting capacity, efficiency, energy consumption, and ease of use, and compared to manual roasting. The effect of roasting temperature (120°C and 135°C) and time (45 and 60 min) on performance was analyzed using ANOVA in a Completely Randomized Design (CRD). Duncan's Multiple Range Test (DMRT) was used for mean comparison at a 5% significance level. Results showed a coefficient of variation (CV) of 4.68%, indicating low variability. Roasting time significantly impacted capacity. with 45 minutes increasing capacity to 1.21 kg/hr, while 60 minutes reduced it to 0.89 kg/hr. The machine has an initial cost of Php 48,045.02 and a break-even point of 2,393.53 kg. The custom cost of the machine is Php 8.63 per kilogram, with a net income of Php 9,850.22. The return on investment is 20.50% per year, with a payback period of 5 years.
Keywords: coffee roaster, design, roasting capacity, roasting time, efficiency.
