| General note | This study aimed to develop an instant tea with great appeal to the target clientele, determine the potential use of bili fruit juice as a flavored health tea and find out the effect of the aromatic plant extracts on its acceptability and quality in terms of color/appearance, flavor and taste.<br/> Sensory evaluation was made by 10 laboratory panelist using the 9-point Hedonic scale. Data gathered were subjected to the Analysis of Variance (ANOVA) to determine if there were significant differences between treatments.<br/> No significant differences were observed on the quality in terms of appearance/color, flavor and general acceptability between and among the tea formulations.<br/> The mean ratings for all quality factors as well as overall acceptability have descriptive equivalent ranging from "like moderately" to "like very much" in the Hedonic Scale.<br/> These results showed that addition of the aromatic plant extracts in the level used in the study did not enhance the quality and acceptability of the "bili" tea. This implies that a higher level may be used to exert a significant effect. <br/> |
